Sometimes the simplest recipes are the most satisfying. This velvety carrot soup proves that you don’t need a long list of ingredients to create something truly delicious and comforting.

Ingredients:

 

  • 1 onion, chopped
  • 2 TBS Extra Virgin Olive Oil, or Butter
  • ¾ lb Carrots, finely chopped in food processor
  • 2 cups Water
  • Sea Salt – to taste

Instructions:

  1. Saute onion with olive oil (or butter) over medium heat for 3 minutes – until softened.
  2. Add the carrots and freshly boiled water and simmer partially covered for 10 minutes, or until carrots are tender.
  3. Remove from heat and blend until smooth and creamy – add extra hot water if needed.
  4. Season to taste, a dollop of sour cream or Greek yogurt on top.
