Ingredients

  • 1 Mango peeled, cut
  • 1 avocado, peeled, cut
  • 1 red onion
  • ½ lemon, juiced
  • 2 TBS olive oil
  • Chili powder (adjust to taste)
  • Salt, Pepper
  • 1 handful of parsley
  • 1 handful of shrimp, cooked

Instructions

  1. In a medium bowl, gently combine the mango, avocado, red onion, and cooked shrimp.
  2. In a small bowl, whisk together the lemon juice, olive oil, chili powder, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Fold in the fresh parsley.
  5. Cover and chill in the refrigerator for 15-30 minutes to allow the flavors to meld.
  6. Serve and enjoy!
