A fresh, zesty twist on classic Spanish gazpacho loaded with crisp vegetables, bright lime, and a touch of heat. Perfect for hot days when you want something light, flavorful, and refreshing.

You will need::

  • 1 cup finely chopped English Cucumber
  • 1 cup finely chopped bell pepper (orange or red)
  • 6 whole Roma Tomatoes, seeded and finely chopped
  • ¼ cup Red Onion, minced
  • 1 TBS Jalapeno, minced
  • 1 large Garlic Cloved, minced
  • ¼ cup Cilantro, chopped
  • 1 whole Lime, zest and juice
  • ¼ cup Apple Cider Vinegar
  • 1TBS Worcestershire
  • 4 cups Tomato Juice
  • 1 tsp kosher salt
  • 1 tsp fresh ground pepper
  • 1 tsp hot sauce
Gazpacho

Instructions:

  • In a large bowl, Toss together the cucumber, bell pepper, tomato, onion, jalapeno, garlic, and cilantro.
  • Add lime juice, zest, apple cider vinegar, Worcestershire sauce, and tomato juice in bowl, combine
  • Season with salt and pepper, stir in hot sauce
  • Add 1 lb of large cooked shrimp for an added bonus to make a complete meal!

Chill for at least 30 minutes.  The longer the better!
