You will need::
- 1 cup finely chopped English Cucumber
- 1 cup finely chopped bell pepper (orange or red)
- 6 whole Roma Tomatoes, seeded and finely chopped
- ¼ cup Red Onion, minced
- 1 TBS Jalapeno, minced
- 1 large Garlic Cloved, minced
- ¼ cup Cilantro, chopped
- 1 whole Lime, zest and juice
- ¼ cup Apple Cider Vinegar
- 1TBS Worcestershire
- 4 cups Tomato Juice
- 1 tsp kosher salt
- 1 tsp fresh ground pepper
- 1 tsp hot sauce
Instructions:
- In a large bowl, Toss together the cucumber, bell pepper, tomato, onion, jalapeno, garlic, and cilantro.
- Add lime juice, zest, apple cider vinegar, Worcestershire sauce, and tomato juice in bowl, combine
- Season with salt and pepper, stir in hot sauce
- Add 1 lb of large cooked shrimp for an added bonus to make a complete meal!
Chill for at least 30 minutes. The longer the better!
