Cooling Cucumber and Lime Salad

Try this refreshing cucumber salad, perfect for those warm summer days!

You will need:

  • 3 Cucumbers (diced – appx 3 ¼ cups)
  • ¾ cup Red Onion (chopped)
  • ¼ cup Mint Leaves (sliced)
  • 1 Lime (Zested)
  • 2 TBS Lime Juice
  • 1 TBS coconut oil
  • 1 tsp Rice Vinegar
  • 1 tsp Agave Nectar

 

lace cucumbers and onions in a bowl.  Gently toss in mint, lime zest, lime juice, coconut oil, rice vinegar, agave nectar.

Chill for 15 minutes, serve and enjoy!
